This creamy coconut vegetable dahl is a perfect vegetarian and vegan meal. It's full of the traditional flavours of India, with all the hard work done for you already. Dahl is a hearty and nutritious meal, perfect for any time of the day. Just by adding a few extra ingredients along with one of our dahl mixes you will have dinner ready in just 30 mins.
- 1 tablespoon of olive oil
- 1 packet of Love My Earth Dahl mix
- 800 mL of boiling water
- 1 400 mL tin of coconut cream
- 4 cups of mixed vegetables
1. Add Organic Dahl mix to a saucepan and fry until fragrant.
2. Add 4 cups of vegetables, water and coconut cream.
3. Bring to the boil, then reduce heat to a low to medium simmer.
4. Cook for 30 mins.
Serve with: Yoghurt and Fresh Herbs, Basmati Rice, Quinoa, Roast Vegetables, Zucchini Pasta, Flat Bread or Roasted Cauliflower.
