Add 1 teaspoon of tea to 250ml of
boiling water per person to capture the perfect strength, but as always I
invite you to experiment and see what suits you best. Add milk and simmer, then sweeten with honey and strain.
For full-bodied flavour, simmer for at least 10 minutes (the longer the better!).
Serve black or with milk.
