One Pot Rice & Vegetable Korma

This one-pot organic basmati rice dish is quick and easy to prepare. The addition of the organic curry mix and vegetables turns it into a delicious lunch or dinner the whole family can enjoy.


1 1/2 cups of Love My Earth Brown Basmati Rice

1 cup of mixed vegetables cut into cubes 

3 cups of boiled water 

1 tablespoon of Love My Earth Korma mix

Lashing of oil of your choice (coconut, ghee, olive)

Salt and Pepper to taste



1. Add rice to a saucepan with vegetables, oil and curry powder
2. Fry off for 30 sec to release flavours
3. Add 3 cups of boiling water
4. Bring to the boil
5. Reduce to a low heat and cook for 25-30 mins with the lid on
6. Serve with hummus, yogurt, cashew dip or chutney


You can make with white basmati, just reduce coking time. I love using peas or adding fresh spinach to garnish.
