Spicy Mushroom Stirfry

This dish was inspired by some wonderful mushrooms from  Brisbane's powerhouse markets. I've added a twist with some butter chicken mix to make this a delicious spicy side or main.


12 cups of mixed mushrooms

Handful of green beans

Handful of capsicum

3 Chopped garlic cloves

1 1/2 tablespoons of Love My Earth Organic Butter Chicken mix

Half a lime or lemon

Cashew cheese or hummus



1. Fry garlic in a hot pan or wok with oil
2. Add Butter Chicken mix fry until fragrant
3. Add all the vegetables in to the pan and toss well, coating in the oil and spices
4. Cook until vegetables are to your liking
5. You may need to add in a few splashes of water, as the mushrooms will soak up the oil
6. Serve with cashew cheese or hummus on top and a squeeze of lemon or lime
