Love My Earth’s very own signature slow cooked beef Vindaloo.
This traditionally spicy Indian curry is a favourite among spice-lovers. Love my Earth’s medium to a hot blend of spices works well with your favourite choice of meat, seafood or vegetables.
We slow cooked in the beef to create an extra tender curry that melts in your mouth.
Large lashing of Oil
600g of organic beef cubed ( l used chuck steak )
1 brown onion
1 red capsicum
1 tin of chopped tomatoes
1 tablespoon of apple cider vinegar or lemon juice
- Heat 2 tablespoons of oil in a frypan, 2 tablespoons of Vindaloo mix and fry until fragrant
- Add chopped beef, chopped onion, capsicum and brown
- Pour into slow cooker
- Add a 400g tin of chopped tomatoes and apple cider vinegar to meat mixture in slow cooker ( salt and pepper to taste )
- Slow cook for 8 hrs
- Serve with basmati rice and fresh coriander.
Add fresh garlic or chilli for a flavour boost
Make a double batch and freeze for extra dinners
If you haven't got time to slow cook use a more tender cut of beef
